This Honey Ginger Lime Vinaigrette is a delicious combination of sweet and spicy. It is a perfect dressing for a regular salad, but really shines on a noodle or grain bowl with an Asian theme.
Honey Ginger Lime Vinaigrette also packs a healthy punch, mixing all of the health benefits of honey with the cold fighting power of fresh ginger and garlic. It can be served slightly warm when first made, or at room temperature later.
When it comes to choosing an oil for this homemade salad dressing recipe, extra virgin olive oil is a perfectly fine choice. But if you want to up the health factor even more, consider hemp or flax oil. These options add extra Omegas and work well for a dressing (they lose their potency when heated too much).
If you want to save for more than a few days, store this homemade dressing in the refrigerator and be sure to take it out a little bit ahead of when you want to use it. The oil and vinegar will separate and the honey may thicken, so you'll need to give it some time to come to room temperature and then give it a good shake.

Honey Ginger Lime Vinaigrette Recipe
6 Tablespoons olive oil (can be substituted with hemp or flax oil for added health benefits)
3 garlic cloves, minced
1 Tablespoon finely chopped fresh ginger
2 Tablespoons rice wine vinegar
1 Tablespoon lime juice
2 teaspoons soy sauce
Salt & Pepper to Taste
Place your oil in a small saucepan over low heat. Add garlic and ginger and gently heat for about 5 minutes - this helps to release the flavor of the garlic and ginger so that they will permeate the dressing. Remove from heat. Add remaining ingredients and mix until well-blended. Pour into a salad dressing container or serve immediately.
Fresh cilantro and scallions make a great final touch over a salad or noodle bowl tossed with this dressing!
